Are there any articles/sites with some notes on some of the players that might go in the later rounds of the draft?  I've searched, but I've really only found up to the first 100 or so.

Not really. Other than local papers, later round candidates just don't' get much press.

It's really hit or miss because a lot of the late rounders wind up committing to a college instead of signing so they can hopefully improve their draft stock (since the harder to sign players don't get large bonuses anymore a la Dillon Maples) and get a bigger signing bonus/have a backup plan in case they're a bust.

Lower number is where they're at currently, the second number is their ceiling, yes.
