I made my family’s Puerto Rican rice yesterday. It was OK. But just OK isn’t good enough for me. Because even though it looked good and passed the smell test, the rice wasn’t perfectly cooked. And as someone who is my own harshest critic, I spent a good chunk of my night re-tracing what I could have done differently and what I will do to change it up next time.
One of the challenges in cooking long-time family recipes comes when I realize whatever I do won’t be as good as the way my mother or grandmother made it.. Some things aren’t as good as the original. But from there, that’s when evolution happens. I can’t wait to get back in the kitchen and go back to work.
